For the more experienced players, what enemy units in every army do you try to kill first and please explain why.

That's an incredibly complex question, but not a bad one. I imagine the decision will be highly circumstantial.
I look forward to the responses (I'm not properly qualified to answer myself).

Persoanlly I look for the unit that could do me the most potential damage and try to kill it with shooting first then If I can assualt.

Situational for me based on mission and deployment.
In a kp game, take out the easy ones or anything that can easily reap your units.
In an objective game, take out their mobility and then scoring units.
As a nid player, people usually go for my tyrant, trygon, and t4 multiwound models that are easily ID'able.
After deployment I usually do a threat analysis in my head. Sometimes you'll realize you can even ignore certain units early in the game.
Hard to pin down specific unit as mission and deployment/first turn can drastically change what units neeed to be killed first.

People actually do this? Think about units they plan to kill? I always just push my berserkers across the table until their bases touch the other army's bases.
I do try and follow what Iron Warrior said. Determine which unit will be a problem, or which unit I might not be able to handle and try and disable it first. Hit it with shooting to soften the unit up and try and quickly finish it in CC.
Determining what unit you want to kill will vary depending on mission and what army you are playing and what army your opponent is playing. So think of the mission and then think of what unit you want in your deployment zone least, and hit that first.

For the most part I will try to take out the fastest units first as I have less time to handle those. However depending on the list this may change. For example in a bug list with many Terv's I may split my fire up and go for those first.
I agree with the "do a threat analysis first" as it will be different not only in every game but every turn.

definitely prioritize what will be the biggest threat to you based on the mission, usually high mobility units and troops for objective missions...
personally i find what ever units of mine will do the most damage to the enemy (whether it be a certain tank, or a unit tooled for a specific job), and then try to take care of what ever will be a threat to my key units against whatever army i might be facing... that way my key units will be free to do what they do best

Well that's certainly a big question and it has no right answer.
Really, it comes down to how your army is set up, how your opponent's is, which mission you're playing and how you're both deployed.
If you're facing a slow army in an objective mission and you have a speedy force, you want to keep him from removing your mobility, so you go after his big guns and units that can shut you down, maintaining your advantage.
If you have a shooty foot army in a KP game versus a heavily mechanized army, you go after the biggest threats to you (anti-infantry weapons and the like) and mop up with easy KPs later.
If you're facing a rock list, like a dual Land Raider or BW rush, go after the support elements and leave the rock with nothing to do but rush towards you, then you can focus your entire army without worrying about support elements restricting your mobility or suppressing your shooting.

Pretty much what everyone else said, it all comes down to the army your playing against and the mission you are playing.
Take the last game of the 40k tournament for men...I was playing my very shooty Crimson Fist's army against Blood Angels. I knew that if he got close to my lines I was going to be in a world of hurt, so I concentrated my fire power on his Rhino's, Furioso, and Assault squad. Granted he had a dev. squad but I knew my army could out shoot his, I just couldn't afford to let him get close or I was done for.

I shoot the thing that has the most armor, so that when my squishy little tau get run over I can say "well at least I took out that d**n Monolith/Land Raider, suck on that opponent who just beat me!"
